What You Should Know About Hatch Chile Peppers

These Chile Peppers are a unique Pepper that are grown in the Hatch valley of New Mexico.   The flavor profile is like no other pepper.  This is due to the high altitudes, along with the hot days and cool evenings in New Mexico Hatch Chiles have thicker skin, so the skin will peel off easily when roasted.  

The range in heat/spiciness is from Mild-extra Hot. Trig's features all four heat levels available this year, mild, medium, hot and extra hot.

How Can You Serve Hatch Chile Peppers?

How to Prepare Roasted Hatch Chile Peppers for Use at Home

  1. Pull the stem out of the end of the pepper gently.
  2. Slice the pepper in half, lengthwise.  (Tip to Stem).
  3. Flatten one side of the pepper out on cutting board.
  4. Scrape the seeds out of the inside. Flip the half over, and gently scrape the charred skin off the other side. Repeat for the other side. 
  5. Slice the pepper into desired pieces or drop whole into freezer bag for storage.
